James’ Oriental Salad

Sometimes it just comes to me. I am sitting peaceful and the ingredients kind of flow into my head. The original idea was about Asparagus but when I didn’t seem to have any in my fridge, I decided to use green beans as the main thing, although asparagus would be even better I think. Either way, this a great summer salad.

Ingredients

1/2 package of grape tomatoes, cut in two
1 bunch of scallions cleaned, trimmed and diced
1/2 can Garbanzo Beans
1/2 head of cabbage, shredded
1 full package of Trader Joes Haricots Verts (thin green beans) Or Asparagus
1/2 european cucumber, sliced thin
2 Tbs toasted sesame seeds
1/4 cup rice vinegar
The juice of 1 lemon
1/4 cup Thai Sweet Chili sauce
salt and pepper to taste

Directions

Steam or cook green beans or asparagus until tender
Cool beans or asparagus, cut into bit sized pieces
Combine ingredients in a large bowl
Refrigerate salad for at least 1 hour
