Cauliflower Mac & Cheese
I came up with this one one afternoon, when I forgot to plan my dinner very well. Evidently it has been done before by others many times. But I came up with this one all on my lonesome.
Ingredients :
2 boxes of that cheap-ass store mac & cheese
1 medium head of cauliflower, florets and chunks of stalk
1 cup 2% milk
1 cup water
1/2 cup grated cheddar cheese
Salt and pepper taste
Optional Panko and scallions toppings

Preheat the oven to 350 degrees.
- bring 6 cups of water to boil and add cut up cauliflower.
- spray, baking dish with oil and add two boxes of mac & cheese to the dish.
- in a separate bowl add two packets of the cheese mix to come with the mac & cheese, milk and water. Whisk well.
- when cauliflower is just getting tender, drain and put into baking dish on top of the Mac the macaroni. Pour cheese, milk mixture over the entire dish, tipping the dish to make sure everything’s Salt and pepper to taste. Salt and pepper to taste.
- place Baking dish in oven on the middle rack and bake for 20 minutes.
- remove from oven and stir contents of the baking dish well. Sprinkle grated cheddar cheese across the top and return to the oven.
- After 10 minutes and when the cheese is fully melted, remove from oven.
- before serving you can dust with Panko breadcrumbs and return to oven to get toasted and or you can sprinkle with scallions chopped up or you can just serve it hot as is
