Smash Burgers
I inherited a small aluminum griddle from my mom when she passed. I finally got to use it when I discovered this recipe. Then I figured out why we never used it – it was too small and warped when it got hot. But I got the Smash Burger bug and bought a big steel one I use now. Most consider the “proper” smash burger to be 2 patties. No one at our house could finish a two-patty version. This recipe is for a single patty but is easily addable to doubling. Oh Baby!
Ingredients:
2 lbs of ground beef
2/3 cup Italian breadcrumbs
One egg
3 to 4 good-sized onions sliced and divided into rings
1 tsp each garlic and onion powder
1 Tbs Worcestershire sauce
1 tsp of Tajin spice
1 tsp mustard powder
Six slices of sharp cheddar cheese
Six slices of good smoked bacon cooked and halved
Salt, substitute, and course ground black pepper to taste
Dill pickles.

Directions:
- Add ground beef, breadcrumbs, egg, spices, and “wash-you-sister “r sauce to a large mixing bowl. Mix well and form balls of hamburger. Set aside.
- Slice onions, thinly and separate into rings. Set aside
- Place the gridle on the stove or grill and heat olive oil until it shimmers
- Add one handful of onion rings to each burger being cooked.
- Allow onions to caramelize.
- Place each burger ball on top of each onion pile. Cover the ball with a 10” square of parchment paper, and smash it into a patty. Repeat for each burger.
- Cook the Smashburger onion mixture for 3 to 4 minutes on each side or to your preferred level of doneness.
- Place two halves of bacon on each patty and cover with cheese
- When cheese is melted, remove Patty from the gridle and place on prepared buns. Repeat for each Patty.
- Serve hot to hungry people
