Cedar Plank Salmon

A long time ago, my daughter and I attended a demonstration by Sam the Cooking Guy. He cooked Salmon grilled on a cedar plank. Recently, I just couldn’t pass up some of Costco’s wild caught Salmon fillets and decided to try my hand at Sam’s magic.

Ingredients:

4  4oz Wild Caught Salmon fillets or one whole fillet

Cedar plank(s) for the fillets

1 Tbs good olive oil

2-3 Tbs Sriracha

1 Tbs mayonnaise I(Kewpie if you can find it)

1/4 cup brown sugar

Salt Substitute and Coarse Ground Pepper to taste

Directions:

  1. Soak the cedar planks in water for at least1-1-3 hours
  2. Wash, dry, oil, and season salmon fillets, Place on cedar planks
  3. Spread mayo over salmon followed by the Sriracha sauce.
  4. Sprinkle brown sugar over fillets
  5. Place on a medium grill, close, and cook for 10-15 minutes depending on the thickness of the fillets
  6. The cedar may catch fire so have a spray bottle of water handy.

Enjoy!
