“McCann’s” Oatmeal Cookies
I started this recipe from the cookie recipe on the back of a McCann’s Oatmeal box. It just seemed like destiny. Over the years I have tweaked it and made it my own. I even sent them as Christmas presents a couple of times. It’s easy and tasty.
This recipe makes about 30, 2.5 in diameter cookies.
Ingredients:
1 1/4 cups softened butter
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar Or substitute
1 egg, slightly beaten
3 cups Oatmeal – I like McCann’s Oatmeal (but pretty much any will do)
1 1/2 cups All Purpose Flour
1 cup Raisins or Crasins
1 cup Pecan or if you prefer walnut, pieces
1 tsp Vanilla
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 tsp baking power
Instructions:
- Preheat Oven to 350.
- In a large mixing bowl, cream the butter and sugars until smooth
- Add egg and Vanilla into creamed butter and sugars
- In another smaller bowl, combine flour, baking soda, baking powder, salt and cinnamon until thoroughly mixed
- Add dry ingredients to creamed sugars mixture
- Mix in Oatmeal, raisins or Crasins and pecans
- Cover two cookie sheets with parchment paper
- Using a medium sized ice cream scoop, drop a rounded Tbsp. sized blob of cookie dough on to parchment paper.
- Place in to top two racks in oven and set timer for 15 minutes
- When timer goes off cookies should be just browning at the edges. Take out of oven and let cool completely.
- Serve immediately or save for later in an airtight container..
