Broccoli Chicken Casserole
Another dish gleaned from YouTube during my incarceration to illness! Sounded good enough to adjust and to try out.
Ingredients:
1 box garden rotini (or any pasta noodle you like)
1 bottle of garlic, Parmesan wing sauce
8 oz block of cream cheese, softened
1 lbs of shredded chicken (I used rotisserie chicken)
1 10 oz bag of frozen broccoli
1 cup milk or 1/2 cup heavy cream
4 Tbs unsalted butter
1 Tbs garlic. minced
1/2 red onion, very thinly sliced
2 cups low-sodium vegetable broth
1 cup pepper, jack cheese, graded
1 tsp each Italian seasoning, Trader Joe’s, chili lime spice
1 cup Parmesan cheese, grated
Directions:
- Preheat oven to 425
- Pace rotini evenly in a greased 9 x 13 baking dish and cover with onion slices
- Add an entire bottle of wing sauce and minced garlic
- Add milk or cream to casserole
- Add vegetable broth
- Place the cream cheese block on top in the middle
- Distribute butter around the dish
- Add pepper jack to cover the top
- Distribute frozen broccoli evenly on top
- Cover the dish with aluminum foil
- Place the dish on the middle shelf of the oven
- Bake for 45 minutes
- Remove the dish from the oven and the aluminum foil
- Stir, completely mixing the contents
- Season with the Italian seasoning and TJ’s chili, lime spice
- Cover casserole with grated Parmesan cheese
- Return to oven uncovered for 10 minutes
- Remove oven when Parmesan is crisp
