Broccoli Chicken Casserole

Another dish gleaned from YouTube during my incarceration to illness! Sounded good enough to adjust and to try out.

 

 

Ingredients:

1 box garden rotini (or any pasta noodle you like)

1 bottle of garlic, Parmesan wing sauce

8 oz block of cream cheese, softened 

1 lbs of shredded chicken (I used rotisserie chicken)

1 10 oz bag of frozen broccoli

1 cup milk or 1/2 cup heavy cream

4 Tbs unsalted butter

1 Tbs garlic. minced

1/2 red onion, very thinly sliced

2 cups low-sodium vegetable broth

1 cup pepper, jack cheese, graded

1 tsp each Italian seasoning, Trader Joe’s, chili lime spice

1 cup Parmesan cheese, grated

Directions:

  1. Preheat oven to 425
  2. Pace rotini  evenly in a greased 9 x 13 baking dish and cover with onion slices
  3. Add an entire bottle of wing sauce and minced garlic
  4. Add milk or cream to casserole
  5. Add vegetable broth
  6. Place the  cream cheese block on top in the middle
  7. Distribute butter around the dish
  8. Add pepper jack to cover the top
  9. Distribute  frozen broccoli evenly on top
  10. Cover the dish with aluminum foil
  11. Place the dish on the middle shelf of the oven
  12. Bake for 45 minutes
  13. Remove the dish from the oven and the aluminum foil
  14. Stir, completely mixing the contents
  15. Season with the Italian seasoning and TJ’s chili, lime spice
  16. Cover casserole with grated Parmesan cheese
  17. Return to oven uncovered for 10 minutes
  18. Remove oven when Parmesan is crisp
