Bang-Bang ChickenSkewers

Most people have some kind of bang-bang chicken recipe. That’a where I started then things got a little out of hand.

 

 

 

 

 

 

 

Ingredients:

4 Chi ken breasts and thighs or mix,  cut into bite-sized cub

-6 slices of god-smoked bacon (1/skewer)

2 Tb sriracha Sauce + 1/4 cup for basing

1 Tbs Toasted Seame oil

1/4 cut Thai Sweet Chili Sauce

1 red onion Cut vertically in 1/8s and separated

1/4 cup mayonnaise

1 tso rosemary

Salt Substitute and Coase Ground Pepper to Taste

Directions:

  1. Combine chicken, rosemary, 2 Tbs Sriracha and Sesame oil, mix well and set aside in refrigerator to marinade.
  2. Set grill on the highest setting
  3. Assemble skewers – Sliced onion’ bacon, then marinaded chicken; repeat folding the bacon around each chicken onion bite on each skewer;  Repeat for all skewers and set aside
  4. Combine remaining Sriracha, and Thai sweet Chili sauces with mayonnaise and whisk until smooth,
  5. Turn 1/2 of the grill burners off and place skewers on the “cool side. grill for 7 minutes and the reverse, turn cool side burners on and place the sekwers, (turned) on the new “cool” side for 7 minutes. At no time should the flame be under the skewers. Repeat until all sides of skewers are crisp, and then baste them with the basting sauce. Grill for 2 minutes with he sauce on each side, Then remove from the grill and let cool for 5 minutes.
  6. Serve hot with remaining basting sauce and your favorite sides
