Chicken Rub
I have been a big fan of Mojo Criollo since Mrs. Noah made her wonderful Cuban Chicken for her son, Danny, and me after school because she thought we were both skinny. Now that I am smoking chicken. I thought I would branch out on my chicken seasoning a bit.
Ingredients:
1 Tbs Cumin
1 Tbs Coriander
2 tsp Garlic Powder
1 Tbs Sweet Paprika
1 Tbs Trader Joe’s Chili-Lime Spice
1 tsp salt substitute
1 tsp coarse ground pepper
1 tsp ground sage
Directions:
- In a small bowl combine all ingredients until thoroughly mixed with no lumps or clumps.
- After drying the chicken with paper towels, generously sprinkle rub everywhere. Pat the rub into the chicken and allow it to rest for 30 minutes or as long as overnight.
- Grill or smoke using your normal crispy skin method and enjoy.
