Chicken Rub

I have been a big fan of Mojo Criollo since Mrs. Noah made her wonderful Cuban Chicken for her son, Danny, and me after school because she thought we were both skinny. Now that I am smoking chicken. I thought I would branch out on my chicken seasoning a bit.









1 Tbs Cumin

1 Tbs Coriander

2 tsp Garlic Powder

1 Tbs Sweet Paprika

1 Tbs Trader Joe’s Chili-Lime Spice

1 tsp salt substitute

1 tsp coarse ground pepper

1 tsp ground sage


  1. In a small bowl combine all ingredients until thoroughly mixed with no lumps or clumps.
  2. After drying the chicken with paper towels, generously sprinkle rub everywhere. Pat the rub into the chicken and allow it to rest for 30 minutes or as long as overnight.
  3. Grill or smoke using your normal crispy skin method and enjoy.
