Creamy Cucumber Salad

My mom used to make this a lot. I think she did it just to give my brother and I, a break from our high volume, low cost side dish staples – potato and macaroni salads. This is a really good cool summer salad to go with your grilled dinner. Or if you buy too many cucumbers any time of year, like I do sometimes.

 

 

Ingredients:

1 English Cucumbers sliced thin
1/2 Red or Yellow Onion (Red is prettier but you know), thinly sliced
2 tsp of salt
1 cup mayonnaise
2 Tbs wine vinegar
2 garlic cloves, minced (~1 tsp)
1 tsp dill (fresh if you can but..)
1 tsp sugar or equivalent
1 tsp coarse ground pepper
1/2 tsp Smoked Paprika

Directions:

  1. Place thinly sliced cucumbers in a bowl. Add 2 tsp salt and mix well. Allow cucumbers to set for 30 minutes. Drain and pat cucumbers dry. Return to bowl.
  2. Add everything else and stir well. Coat all the cucumbers and onions with sauce.
  3. Allow to rest in refrigerator for 1/2 hour before serving. If the sauce consistence is to thin to your liking you can drain some of it ..or add some sour cream to thicken it.
  4. Sprinkle Paprika over the top and serve.
