Creamy Cucumber Salad
My mom used to make this a lot. I think she did it just to give my brother and I, a break from our high volume, low cost side dish staples – potato and macaroni salads. This is a really good cool summer salad to go with your grilled dinner. Or if you buy too many cucumbers any time of year, like I do sometimes.
Ingredients:
1 English Cucumbers sliced thin
1/2 Red or Yellow Onion (Red is prettier but you know), thinly sliced
2 tsp of salt
1 cup mayonnaise
2 Tbs wine vinegar
2 garlic cloves, minced (~1 tsp)
1 tsp dill (fresh if you can but..)
1 tsp sugar or equivalent
1 tsp coarse ground pepper
1/2 tsp Smoked Paprika
Directions:
- Place thinly sliced cucumbers in a bowl. Add 2 tsp salt and mix well. Allow cucumbers to set for 30 minutes. Drain and pat cucumbers dry. Return to bowl.
- Add everything else and stir well. Coat all the cucumbers and onions with sauce.
- Allow to rest in refrigerator for 1/2 hour before serving. If the sauce consistence is to thin to your liking you can drain some of it ..or add some sour cream to thicken it.
- Sprinkle Paprika over the top and serve.
