Creamy Tomato Pasta
This is another refugee from Facebook. I think I tweaked it quite a bit, but it’s the basic thing was found online. I think this will join the rotation. It’s tasty flexible, and quick to make.
Ingredients:
1 pkg Cherry or grape mattes
12 oz your favorite pasta noodles
~1 lbs smoked bacon, cut into 1 inch pieces
~ 1 cup fat free cottage cheese
~ 1 cup LitesSour cream
2 cloves of garlic, minced
1/2 sweet onion, sliced thin
1/2 poblano pepper, diced
1 Tbs Italian seasoning
1/2 tsp Tajin spice
~ 1/4 tsp red chili flakes
Salt and pepper to taste
Parmesan cheese, grated
Directions
- :Prepare pasta in accordance with directions. Reserve one cup pasta, water set aside.
- In a large Dutch oven or frying pan, add bacon and cook until crispy. Set aside on a paper towel covered plate.
- Add onion, poblano, peppers, and tomatoes. Sauté until all vegetables are soft.
- Add garlic, Italian seasoning. Mix well. Add Tajin, pepper flakes, salt and pepper to taste.
- Add pasta, cottage cheese, and sour cream. Mix well. Add pasta water as needed. to make the sauce creamy.
- . Serve hot with Parmesan cheese.
