Creamy Tomato Pasta

This is another refugee from Facebook. I think I tweaked it quite a bit, but it’s the basic thing was found online. I think this will join the rotation. It’s tasty flexible, and quick to make.

 

 

 

 

 

 

Ingredients:

1 pkg Cherry or grape mattes

12 oz your favorite pasta noodles

~1 lbs smoked bacon, cut into 1 inch pieces

~ 1 cup  fat free cottage cheese

~ 1 cup LitesSour cream

2  cloves of garlic, minced

1/2 sweet onion, sliced thin

1/2 poblano pepper, diced

1 Tbs Italian seasoning

1/2 tsp Tajin spice

~ 1/4 tsp red chili flakes

Salt and pepper to taste

Parmesan cheese, grated

Directions

  1. :Prepare pasta in accordance with directions. Reserve one cup pasta, water set aside.
  2. In a large Dutch oven or frying pan, add bacon and cook until crispy. Set aside on a paper towel covered plate.
  3. Add onion, poblano, peppers, and tomatoes. Sauté until all vegetables are soft.
  4. Add garlic, Italian seasoning. Mix well. Add Tajin, pepper flakes, salt and pepper to taste.
  5. Add pasta, cottage cheese, and sour cream. Mix well. Add pasta water as needed. to make the sauce creamy.
  6. . Serve hot with Parmesan cheese.
