Fresh Zucchini Salad

I got some Zucchini and since it was hot outside, i decided to make a nice summer salad.

 

 

 

Ingredients:


4-6 fresh zucchini squash (dark, light green and yellows), sliced very thin
2 cloves garlic minced or sliced thin
5 Tbs s olive oil
5 Tbs Lemon Juice
2 Tsp Red Wine vinegar
zest from one lemon
1/2 red onion, sliced thin
1/3 cup Ken’s Steak House Caesar dressing
salt, or to taste
1 Tsp each Parsley, Dill and Cilantro
Garnish Optional: Additional parsley or cilantro

Instructions:

  1. Slice the squash as thinly as you can. I used a vegetable peeler. Sprinkle with kosher salt, and let sit for 15 to 30 minutes. Rinse and drain on paper towels.
  2. Mix together the lemon juice, vinegar, garlic and olive oil. Toss with the zucchini and red onion. Season with salt and pepper. Cover and refrigerate for four to six hours.
  3. Remove from the refrigerator. Add the fresh herbs, lemon zest, Kenos Steak House Creamy Caesar and toss together. Taste, adjust seasoning, add parsley or cilantro and serve.
