Mexican Green Beans

Its a wild and sexy Cinco de Mayo at Casa McCann. This is an easy side dish to accompany your Pescado Agridulce and yellow rice. Its quick, easy and tasty.,






I bag of fresh green beans, trimmed and washed
3 cloves minced garlic
1 small yellow onion, chopped
1 can Rotel (diced tomatoes, green chilies)
1 tbs of olive oil
1 tbs key lime juice
1 tbs Cholula sauce
3 oz Queso Blanco
Kosher salt and coarse ground black pepper to taste


  1. Heat oil in a large skillet set over medium heat. Once hot, add the onion garlic and beans.
  2. Stir fry until beans are tender but still a little crisp and the onions are clear.
  3. Add Rotel with juices and simmer for 10 minutes or so
  4. Add key lime and stir just before serving. Garnish with some crumpled Queso Blanco, if you have it.
