Mexican Green Beans
Its a wild and sexy Cinco de Mayo at Casa McCann. This is an easy side dish to accompany your Pescado Agridulce and yellow rice. Its quick, easy and tasty.,
I bag of fresh green beans, trimmed and washed
3 cloves minced garlic
1 small yellow onion, chopped
1 can Rotel (diced tomatoes, green chilies)
1 tbs of olive oil
1 tbs key lime juice
1 tbs Cholula sauce
3 oz Queso Blanco
Kosher salt and coarse ground black pepper to taste
- Heat oil in a large skillet set over medium heat. Once hot, add the onion garlic and beans.
- Stir fry until beans are tender but still a little crisp and the onions are clear.
- Add Rotel with juices and simmer for 10 minutes or so
- Add key lime and stir just before serving. Garnish with some crumpled Queso Blanco, if you have it.
