Patriotic Shortcake

I came up with this one on the 4th of July this year and it was so quick, so simple, so tasty and so obvious I wondered why I hadn’t done it before.








1 12 pack short cakes
1 pt fresh blueberries, washed
1 lbs fresh strawberries. washed and thinly sliced
4 Tbs granulated sugar or substitute*
4 Tbs Key Lime Juice*
4 Tbs cold water
Copious amounts of sweet whipped cream or topping*

*start there and adjust to your desired level of sweetness, tartness and creaminess


  1. In a large bowl mix berries, sugar, key lime juice and water gently but thoroughly.
  2. Taste and adjust sugar or key lime juice amounts to suit your tastes.
  3. Place on short cake in a small bowl and cover it with the berry mixture and then add the whipped cream patriotically. (psst! some citizens have been known to use vanilla ice cream in stead of or in addition to the whipped cream)
