Spinach Antipasto Salad

I have no idea where this one came from. I was shopping for food, saw something that reminded me of antipasto and it just sort of grew from there.I guess I was in a healthy Italian mood. 

 

 

 

 

 

 

Ingredients:

1 lbs spinach or baby spinach. washed
1/2 cup feta stuffed olives
1/2 cup salami slices halved
1/2 cup whole Kalamata olives, rinsed
4-5oz of Prosciutto Wrapped Mozzarella Cheese Panino, sliced 1in diagonal
8 oz Mozzarella pearls
2-3 hard boiled eggs, quartered
2 fresh tomatoes, chunked
1 bunch, fresh basil, rough chopped
1 small red onion, sliced thin and separate into rings
2 Tbs capers, drained
2 Tbs good oil oil
1/2 cup garbanzo beans, drained and rinsed
1 tsp oregano
Your favorite Italian Dressing, homemade or store bought
Grated parmesan cheese
Salt and pepper to taste
Croutons

Directions:

  1. Create a bed of baby spinach leaves on the platter.
  2. Sprinkle with 2 Tbs of good olive oil and parmesan cheese
  3. Sprinkle tomatoes, basil, eggs, salami capers, garbanzo beans, onion slices, olives, mozzarella, oregano, salami slices and panino slices over spinach layer.
  4. Sprinkle croutons, fresh ground pepper and parmesan over the platter

Serve with your favorite Italian dressing and grated Parmesan on the side.
