Asian Cucumber Salad

One of the reasons summertime is my favorite time of year are all the great salads you get to have. In this case, I am mixed up a couple of favorites I used to make a chickpea salad and a cucumber salad and enjoy both this time I decided to put them together. I hope you enjoy too.

 

Ingredients:

2 large cucumbers, thinly sliced

1.4 cup tamed, jalapeƱo slices

1  can  chickpeas, drained, and rinsed

1/4 cup rice vinegar

1 Tbs soy sauce

1 Tbs sesame oil

2 cloves garlic, minced

1 tsp grated ginger

1/4 tsp red pepper flakes

2 Tbs toasted sesame seeds

2 green onions, sliced Or ! 1/2 red onion, sliced in

1/4 cup chopped fresh cilantro  or Basil

Directions:

  1. Mix ingredients together.
  2. Chill in refrigerator for at least one hour
  3. Garnish with cilantro or basil
