Avocado Cucumber Salad

My Mom used to make this wonderful cucumber salad with cucumbers, red onions, sour cream, Worcestershire sauce and lemon juice. This is a low saturated fat version of Mom’s salad. Here in Cali they tend to put avocados on most everything but in the case it worked really well.

 

 

 

 

 

 

Ingredients:

2 scallions, trimmed then sliced crosswise ¼-inch-thick
1.5 lbs. mini cumbers, trimmed halved and with seeds, removed sliced thin
1/2 red onion, sliced thin
1/4 cup low-fat or fat-free sour cream
1/2 cup fat-free Italian dressing
2 very ripe avocados, peeled, pitted, and sliced thin
2 Tbs key lime juice, plus more as needed
1 tsp Worcestershire sauce
1 tsp Trader Joe’s Chili Lime spice
1 Tbs fresh, frozen, or freeze-dried dill
salt substitutive and coarse ground pepper to taste

Directions;

    1. Prep all ingredients.
    2. Stir the salad ingredients together, gently, just until the avocado breaks down a bit. The cucumbers and onion should be glossed with avocado
    3. Taste and add salt substitute, pepper, and key lime juice, as needed.
