Bacon Onion Spaetzle

I confess! I love butter noodles. I think I would eat them with every meal given the option. But I also like variety so I found this one. Spaetzle is a specific noodle used in German cooking but I changed it to wide egg noodles for my version,

 

 

 

 

 

 

Ingredients:

8 slices smoked bacon, sliced thin

1 red onion, halved and sliced thin

12 oz bag of Whole Wheat Wide Egg Noodles, cooked according to direction (Spaetzle is fine too)

1/2 cup each grated parmesan and pepper jack or cheddar

12-18 chives or scallions finely chopped

Directions:

    1. Warm a large non-stick skillet over medium heat and add the bacon.
    2. A dd the onions when the fat has rendered. Continue to cook, stirring now and then, until the bacon is starting to crisp and the onions are turning a caramelized brown. (~25min or so). Reduce the heat if you need to and if you are short on fat, add a little but there should be enough from the bacon.
    3. Once the onions are nicely brown, add the noodles and mix well.
    4. Add the cheese, mix through, then serve hot with the chives or scallions sprinkled on top.
