Bacon Onion Spaetzle
I confess! I love butter noodles. I think I would eat them with every meal given the option. But I also like variety so I found this one. Spaetzle is a specific noodle used in German cooking but I changed it to wide egg noodles for my version,
Ingredients:
8 slices smoked bacon, sliced thin
1 red onion, halved and sliced thin
12 oz bag of Whole Wheat Wide Egg Noodles, cooked according to direction (Spaetzle is fine too)
1/2 cup each grated parmesan and pepper jack or cheddar
12-18 chives or scallions finely chopped
Directions:

- Warm a large non-stick skillet over medium heat and add the bacon.
- A dd the onions when the fat has rendered. Continue to cook, stirring now and then, until the bacon is starting to crisp and the onions are turning a caramelized brown. (~25min or so). Reduce the heat if you need to and if you are short on fat, add a little but there should be enough from the bacon.
- Once the onions are nicely brown, add the noodles and mix well.
- Add the cheese, mix through, then serve hot with the chives or scallions sprinkled on top.
