Baked Ravioli Comfort

This year the ballot was very wimpy, with only one office so we had a lot of time on our hands to come up with new recipes.







1 24 oz pkg. frozen beef or cheese or combo ravioli
8 oz mushrooms, sliced
1/2 sweet onion, sliced thin
1 16 oz Ricotta or cottage cheese
2 cans Kirkland tomato sauce
1tsp garlic, minced
1/2 tsp each, oregano, basil, sugar
1 16 oz pkg mozzarella
1 8 oz pkg Parmesan cheese


  1. Reheat oven to 350
  2. Spray 9×13 baking dosh
  3. Add frozen ravioli
  4. Sauté mushrooms, onions, garlic, oregano, and basil in a non-stick saucepan until mushrooms are golden and onions are clear
  5. Add tomato sauce, sugar, salt substitute, and coarse ground pepper to taste
  6. After mixing the sauce well , spoon 1/2 over the ravioli in the baking dish
  7. Add Ricotta or cottage cheese and spread evenly
  8. Spoon the remaining sauce over the cheese layer
  9. Cover with mozzarella
  10. Cover dish with aluminum foil and place in oven
  11. Bake for 30 minutes
  12. Remove dish from oven and switch to broil
  13. Remove foil and spread parmigiana on top
  14. Place dish back in the oven for 10 minutes and serve hotEnjoy!
