Breakfast casserole
I found this recipe online, but modified it significantly. I think it’s much better than it was gonna be before. Try and see if you like it.
Ingredients:
10 eggs
1 cup half-and-half or heavy cream
1 b 16 ounce bag of shredded potatoes
1/2 onion thinly sliced
1 lbs good smoked bacon, crispy chopped
1 lbs hot turkey breakfast, sausage, Browned – excess moisture removed
1 tsp dry mustard
1/4 tsp crushed red pepper flakes
Salt or salt, substitute and coarse ground pepper to taste
2 cups sharp cheddar cheese,, grated and divided
1/2 cup tamed, jalapeños
Directions:
- Preheat oven to 350°F
- Spray 9 x 13 baking pan with cooking oil. Add shredded.potatoes and add a.layer of sliced onions over the top.
- In a large mixing bowl, whisk together, eggs, half-and-half, mustard, and chili flakes fold in half the cheddar cheese and pour on top of scallop potato mixture in baking pan.
- Place on metal rack in oven and bake for 50 minutes.
- Remove from the oven sprinkle the remaining cheese over the top and place jalapeños on top of the mixture. Increase temperature in oven to 400°F and return dish to the oven and bake for 20 minutes.
- Serve hot.
