Breakfast casserole

I found this recipe online, but modified it significantly. I think it’s much better than it was gonna be before. Try and see if you like it.

 

 

 

 

 

 

 

Ingredients:

10 eggs

1 cup half-and-half or heavy cream

1 b 16 ounce bag of shredded potatoes

1/2 onion thinly sliced

1 lbs  good smoked bacon, crispy chopped

1 lbs hot turkey breakfast, sausage, Browned – excess moisture removed

1 tsp  dry mustard

1/4 tsp crushed red pepper flakes

Salt or salt, substitute and coarse ground pepper to taste

2 cups sharp cheddar cheese,, grated and divided

1/2 cup tamed, jalapeños

Directions:

  1. Preheat oven to 350°F
  2. Spray 9 x 13 baking pan with cooking oil. Add shredded.potatoes and add a.layer of sliced onions over the top.
  3. In a large mixing bowl, whisk together, eggs, half-and-half, mustard, and chili flakes fold in half the cheddar cheese and pour on top of scallop potato mixture in baking pan.
  4. Place on metal rack in oven and bake for 50 minutes.
  5. Remove from the oven sprinkle the remaining cheese over the top and place jalapeños on top of the mixture. Increase temperature in oven to 400°F and return dish to the oven and bake for 20 minutes.
  6. Serve hot.
