Cheesy Brussel Sprout Casserole

I found some nice sprouts at the Farmers Market and came up with this very tasty and easy (one pan) concoction.

 

 

 

 

 

 

Ingredients:

1-1.5 ics fresh small brussels sprouts, washed and cleaned
3 Tbs butter
4-5 large garlic cloves, minced
1/2 sweet onion sliced thin
5-6 pcs of good smoked bacon, rough chopped
Salt and fresh ground black pepper to taste
1.2 cup half&half, milk or heavy cream
1/2 cup sour cream
1/2 cup sharpe cheddar
1/2 cup Monterey Jack
1/2 tsp Tajin Spice
1/2 tsp garlic powder
paprika, just a dusting on top

Directions:

  1. Chop bacon and cook in large cast iron skillet.
  2. Drain excess oils and cooked bacon. Return drained bacon to the pan
  3. Add butter, garlic, onions and sauté till onions are clear
  4. Add Brussel sprouts and sauté till tender ~10-15 minutes, stirring regularly – a little char is ok
  5. Remove from heat. Add garlic powder, tajin milk or cream and stir in sour cream
  6. Add cheeses stored in and on top
  7. Preheat oven to 425. Place skillet on th top shelf. Heat until cheeses bubble ~ 2-3 minutes
