Cilantro-Key Lime Rice

I like plain limes in my Gin and Tonic, for any other recipes calling for lime flavor, I switch to key lime juice. I think it tastes better – just a bit less bitter and sweeter. but you can swap in limes.

 

 

 

 

 

 

 

Ingredients:

2 cups rice, Jasmine probably works best but we used brown rice

3.5 cups water

2 cloves garlic, minced

3 Tbs Key Lime juice

1 tsp oil

Salt substitute and coarse ground pepper to taste

1.5 cups of Cilantro chopped fine + some reserved sprigs for garnish

2 Tbs of I Can’t Believe Its Not Butter or equivalent

Directions:

  1. In a small frying pan, heat oil till it shimmers and add garlic, and stir until fragrant.  Remove from heat.
  2. Add rice, garlic oil and stir before you add the water to the rice cooker. Cook rice.
  3. Transfer rice to a bowl. Stir in butter substitute, chopped cilantro, and key lime juice as you fluff the rice.
  4. Add salt substitute and coarse ground pepper, as needed
  5. Top with fresh cilantro sprigs and serve
