I was working on my Gazpacho recipe and stumbled across this recipe. I have always loved avocados and thought this would be a great cold soup addition to my repertoire of cold soups. Its fast, tasty and good for you. My kids and grandkids thought it was weird but I liked it as a tasty little something different.
3 avocados, cut into chunks
3 cups chicken or vegetable broth
3 tablespoons key lime juice
1/3 cup fresh cilantro leaves
1 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon cayenne pepper
Optional Toppings – Crabmeat, mango, chopped tomato, scallions, lime and bacon
- Combine ingredients in a blender, and process until smooth.
- Cover and refrigerate 2 hours or until completely chilled.
- Pour soup into serving bowls and add toppings, as desired
