Corn Casserole
I was looking for something “different” to hang with our Thanksgiving turkey this year and found this thing. Sounded good even before I “Hepped it”.
Ingredients:
1 14 oz of corn kernels drained
1 14oz can of creamed corn
1 cup sour cream (non-dairy works)
1/2 cup butter substitute. melted
1/2 cup tamed Jalapeños, roughly chopped
2 eggs
1 pkg. Jiffy Corn Muffin Mix
1 cup of grated pepper jack (omit for non-dairy version)
Instructions:
- Preheat oven to 350 and spray a 2 qt casserole dish with olive oil.
- Combine all ingredients and fold into a prepared casserole dish.
- Back in the oven for 45-55 minutes. Remove when golden brown.
