Creamy Horseradish-Lemon Sauce

I have been fortunate enough to have eaten in some of the very best steakhouses in the world – Peter Lugar’s. Brooklyn, Lawry’s in Chicago, Cork and Cleaver in Ft Wayne IN, Murray’s Steakhouse, Twin Cities, MN and the La Pointe de La Tour, on the Thames in London. Some of those icons are gone now but the flavors are here in my memory. It is at these places that creamy horseradish sauce soared for me.

 

 

Ingredients:

1/2 cup mayo
1/3 cup sour cream
1 finely chopped scallion
2-4 Tbs prepared horseradish – to taste, add one at a time and taste, stop when it has the right bite for you.
2 tsp of lemon zest
1 lemon’s juice
1/4 tsp kosher salt (its was good without the salt too)
1/2 tso coarse growing pepper

Directions:

  1. In a medium bowl, whisk together all the ingredients.
  2. Place the creamy horseradish sauce in the the refrigerator until ready to serve.
