Egg Salad for Darrian
My granddaughter, Darrian sent her grandpa a text asking for a recipe for egg salad. Two things occurred right away first I forgot all about her request. Secondly, when I remembered her request, I realized I never had a recipe for egg salad so here you go.
Ingredients
:8 to 12 large eggs, hard boiled, peeled and chopped
~ 1/2 cup good good mayonnaise
~ 1/4 cup each – finally chopped celery and onion
~ 1/4 sweet relish
Salt and pepper to taste
Variations:
~ 1/2 cup finely chopped iceberg lettuce
Do pickle relish instead of sweet relish
Fresh dill to taste
~ 1/4 cup tamed, jalapeños, finally diced
Tajin spice to taste
Avocado slices
Mustard
Directions
- For my egg salad. The only precise measurement I’ve used an egg salad and 60 years of making. It is the eggs there’s no point in making egg salad if you have less than eight eggs. All other measurements are are adjustable to your taste. Start with less add more.
- The general idea is to combine all the ingredients you want in your salad and mix well taste adjust seasoning taste, and put it where you want i good bread, or rolled in a wrap, or on top of lettuce whatever works for you. I have tried all of the variations to mentioned above, but not altogether. They were all good. I bet you could think of your own.
