English Muffin Pizza     

This is a dish that we came up with when my wife and I were a starving sailor family. We got good at doing cheap things that we enjoyed like pizza. This is as simple, fast, and flexible as what is in the fridge.  We served 1 split English Muffin pizza (2 halves) to each dinner with some great macaroni or other salad.  This ingredients list gets you 10 pizzas. You can even make it a bit of a do-it-yourself dinner, allowing each diner to assemble their own pizzas.

 

 

 

 

Ingredients

:5 English Muffins. plain or sourdough is best, split, toasted

8 oz mozzarella cheese, grated

8 oz tomato sauce

Pick Your Toppings:

Pepperoni

Salami

Leftover meats – hamburger, chicken, sausage, etc.

Mushrooms, thinly sliced

Onions. sliced thin

Peppwea, Green, Red, Pablano. sliced into thin rings

Ham, diced

Basil leaves, fresh

Oregano

Feta cheese crumbles

Garlic, garlic powder or garlic salt

Red Chili Flakes

Parmesan cheese, grated

Pineapple,  diced

Olives, black or green, sliced thin

Jalapeños, sliced

Directions:

  1. Preheat oven to 400 degrees
  2. Prepare ingredients – toast muffins, simmer your sauce (homemade or store-bought. your choice; prepare leftover items so they are ready to eat;
  3. Assemble your pizzas on a piece of parchment paper covering a rimmed baking sheet. Apply 1.5 – 2 Tbs sauce to each muffin then proceed to assemble your perfect pizzas. Don’t worry about neatness too much,  overloaded pizzas just call for a fork and knife to eat.
  4. When all your masterpieces are assembled on the sheet, place it in the preheated oven.
  5. When the mini[pies are done to your satisfaction, pull the sheet out and serve with your usual pizza condiments – garlic powder, red chili flakes and grated parmesan cheese
