Flavorful Cauliflower

Let’s face it. Cauliflower is tough! Most of us have just reconciled to either dipping it raw into some sort of Ranch Dressing or steaming until tender and then lots of butter with copious shakes of salt and pepper. I have tried a number times to pull together something to enhance the flavor of this hearty veggie but this time I think I have really stumbled on to something. Serves 8

 

 

Ingredients:

1 Large Cauliflower, washed and separated into medium to large florets
1-10 ounce can of Cream of Chicken Soup
2 thin slices of sweet red onion, separated into rings
1 cup water
1 cup grated cheddar ( or mix Monterey Jack)
1/2 cup Feta Cheese Crumbles
1 Tbs garlic
1 Tbs olive oil
1 tsp Tajin Classic Seasoning
Salt and Pepper to taste

Directions:

  1. Preheat oven to 350
  2. Add oil and garlic to a baking dish that will hold the Cauliflower
  3. Place Cauliflower florets in the baking dish add water
  4. Spoon Cream of Chicken soup over the florets
  5. Distribute onion rings over the tops of the florets
  6. Place dish in oven and bake for 1 hour
  7. Remove the dish from the oven; Florets should be almost completely cooked.
  8. Add grated cheddar over the florets and then sprinkle Feta crumbles over the top
  9. Raise oven temp to 425, and bake approximately 15 minutes, or until cheddar has melted and browned at the edges
  10. Sever hot as a side dish to anything from sandwiches to standing rib roast.
