Grandpa’s Oatmeal Cookies

Quite awhile ago now, I started with the oatmeal cookie recipe on the back of my McCann’s Oatmeal box. Over the years and maybe decades, I have tweaked and dithered with this thang so no it results in some pretty fine Oatmeal Cookies that never seem to last too long.  Enjoy!!

 

 

 

Ingredients:

1 1/4 cups softened butter
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg slightly beaten
1 teaspoon vanilla extract
11/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 rounded teaspoon cinnamon 3 cups Oatmeal
3/4 cup raisins or dried cranberries (Crasins)
3/4 cup chopped walnuts or pecans

Directions :

  1. Preheat oven to 350
  2. In a large bowl, cream the sugars and softened butter together until very smooth.
  3. Add slightly beaten egg and vanilla to creamed sugars and butter mixture
  4. In a separate bowl,combine flour, baking soda, salt and cinnamon with a whisk
  5. Add flour mixture to creamed butter mixture slowly until well incorporated
  6. Mix in Oatmeal, Raisins or Cranberries and nuts until thoroughly combined
  7. Drop a well rounded tablespoon of cookie dough on un-greased cookie sheets about an inch or so apart.
  8. Cook for 15-17 minutes until edges are golden brown
