Grilled Pizza
I admit it! With all these ‘damn near free – NOT” backyard pizza ovens being advertised, I became envious. Being unwilling to shell out the big bucks from something I may use every 2-3 weeks, I decided to try something else. I think it’s good for what I need. I use a gas grill, but this works with charcoal too. There are other ways to grill your pizza but I like this one the best.
Ingredients:
2 Tbs olive oil
1 Trader Joe’ Pizza dough(herb or plain)
1 tsp Italian seasoning
1/2 cup Costco Organic Tomato sauce
8-12 oz fresh mozzarella cheese, sliced3 Tbs parmesan cheese, for topping
Tipping of your choice – Parmesan cheese, pepperoni, mushrooms, onion, ham, fresh tomatoes, garlic, pineapple (eww), shallots, pine nuts, fresh basil, etc.
Directions:
- Preheat the grill for 15 – 20 minutes – as hot as it will go
- in a large cast iron skillet, place olive oil. Speed it over the entire surface with your hands, including the sides – oiling both the pan and your hands.
- Place TJ dough ball in the middle of the pan and start stretching it with your oily hands. As it stretches it out, it will shrink back. Keep toting it until it covers the bottom of the pan and goes up the sides, creating a “dee[p dish” shape.
- Spread tomato sauce over the entire pizza. Spread cheese over the sauce.
- Add your selected toppings on top
- I have a 5-burner grill. After the grill is between 450-550 degrees, turn off the center burner. Place the skillet in the center of the grill. Close the grill lid and allow pizza to cook for 10 -15 minutes, then open and, using an oven mitt, turn the skillet 90 degrees; Close and repeat until the pizza is done.
- Remove the skillet from the grill and move the pizza to the cutting board immediately.. Let the pizza rest for a little while.
- Cut and serve.
