Red potato salad Salad

There are about a billion recipes for this disk just on Facebook so  I thought we needed one more.

 

 

 

 

 

 

 

Ingredients

3 lbs small red potatoes, washed and quartered

1/2 red onion, diced

2 Celery, ribs, diced

4 eggs, hard boiled, diced

1/4 cup 10 jalapeƱos and juices,, diced

1/2 cup mayonnaise

1/4 cup sour cream

1 tsp dill chopped, divided

1/4 tsp horseradish

6 pieces of smoked bacon, crispy, and chopped

Salt and pepper to taste

Directions

  1. Bring a large pot of water to boil. Add potatoes and cook until softened but not too soft (~8 minutes). Set aside and allowed to cool completely.
  2. In a large mixing bowl, whisk sour cream, and mayonnaise until smooth. Add horseradish, jalapeƱos and juices. Mix well. Add bacon pieces, onion, celery, eggs, and dill. Mx well.
  3. Add cooled potatoes to the large mixing bowl and mix well. Salt and pepper to taste.
  4. Cover and refrigerate for at least four hours.
  5. Garnish with smoked paprika.
