Roasted Carrots

My sister-in-law bought a bunch of carrots to feed the rabbits that hang at the end of our street but left before she could use them. So I thought I would try something different. Everyone loved it.

 

 

Ingredients:

1 lbs. Carrots. scrubbed good, ends trimmed and sliced into 3/4-1 in diagonal slces

1 Tbs olive oil

1 tsp garlic powder

1 Tbs chili powder

1/4 cup brown sugar

1 Tbs Key Lime Juice

Salt substitute and pepper to taste

Directions:

  1. In a large mixing bowl add all ingredients and mix well coating all the carrot pieces well.
  2. Prepare a rimmed cookie sheet with parchment paper
  3. Spread carrot pieces over the paper so that they do not touch
  4. PLace cookie sheet in a cool oven set to 425 degrees and set timer for 30 minutes
  5. Check carrots for tenderness and return to oven if not cooked enough for you
  6. If you like a little more carnelized char, switch oven to broil for a couple of minutes before plating
