Roasted Carrots
My sister-in-law bought a bunch of carrots to feed the rabbits that hang at the end of our street but left before she could use them. So I thought I would try something different. Everyone loved it.
Ingredients:
1 lbs. Carrots. scrubbed good, ends trimmed and sliced into 3/4-1 in diagonal slces
1 Tbs olive oil
1 tsp garlic powder
1 Tbs chili powder
1/4 cup brown sugar
1 Tbs Key Lime Juice
Salt substitute and pepper to taste
Directions:
- In a large mixing bowl add all ingredients and mix well coating all the carrot pieces well.
- Prepare a rimmed cookie sheet with parchment paper
- Spread carrot pieces over the paper so that they do not touch
- PLace cookie sheet in a cool oven set to 425 degrees and set timer for 30 minutes
- Check carrots for tenderness and return to oven if not cooked enough for you
- If you like a little more carnelized char, switch oven to broil for a couple of minutes before plating
