Sautéd Boiled Eggs 

Another idea stolen from RB but made mo betta!

 

 

 

 

 

 

 

 

Ingredients:

6 eggs hard-boiled and. peeled, cooled, and halved

2 Tbs butter substitute

1 tsp garlic powder

1.2 tsp Tajin spice

1/2 tsp Trader Joe’s Chili Lime spice

1/2 tsp oregano

2 Tbs chopped cilantro or chives

1 cup Pepper Jack Cheese

Salt substitute and coarse ground pepper to taste

Options: sautéed onions, zucchini, jalapeño, or regular green peppers.

Directions:

  1. Melt butter substitute in a large non-stick skillet on low-medium heat.
  2. Season eggs on each side with garlic powder, Tajin, and Chili Lime spices.
  3. Place eggs cut side down into hot butter in skillet and allow them to cook for ~2 minutes.
  4. Sprinkle pepper jack cheese evenly over the top of the eggs. Cover and cook for ~2 minutes until cheese is fully melted. Remove from heat.
  5. Sprinkle Cilantro or Chives over the mixture and serve as is or with options.

Serve hot as part of a hearty breakfast or dinner.
