Sautéd Boiled Eggs
Another idea stolen from RB but made mo betta!
Ingredients:
6 eggs hard-boiled and. peeled, cooled, and halved
2 Tbs butter substitute
1 tsp garlic powder
1.2 tsp Tajin spice
1/2 tsp Trader Joe’s Chili Lime spice
1/2 tsp oregano
2 Tbs chopped cilantro or chives
1 cup Pepper Jack Cheese
Salt substitute and coarse ground pepper to taste
Options: sautéed onions, zucchini, jalapeño, or regular green peppers.
Directions:
- Melt butter substitute in a large non-stick skillet on low-medium heat.
- Season eggs on each side with garlic powder, Tajin, and Chili Lime spices.
- Place eggs cut side down into hot butter in skillet and allow them to cook for ~2 minutes.
- Sprinkle pepper jack cheese evenly over the top of the eggs. Cover and cook for ~2 minutes until cheese is fully melted. Remove from heat.
- Sprinkle Cilantro or Chives over the mixture and serve as is or with options.
Serve hot as part of a hearty breakfast or dinner.
