Shepards Pie V2.0

This is Old English comfort food! I had it in the UK d twice and loved it once. I have been trying to get the one I liked duplicated.  The couple of Tbs of Dano’s Seasonings that I added worked well.

 

 

 

Ingredients:

2 lbs. ground meat (lamb or beef or a mixture)

1 onion, diced

2 carrots, diced

1/2 cup frozen peas

2 Tbs tomato paste

1 celery stalk, diced

1 Tbs garlic (2 cloves), minced

1/2 tsp each, rosemary and thyme

1/2 cup red wine (I like Sangiovese )

Beef broth to cover mixture

1 Tbs Dano’s Original

1 Tbs Dano’s Spicy

1 tsp Worcestershire (pronounced, “wash your sister”) sauce

5-6 potatoes, peeled

1/4 cup unsalted butter

1/2 cup cheddar, shredded

1/2 cup heavy cream, heated

3 egg yolks

1/2 cup parmesan cheese, grated and divided

Salt substitute and Pepper to taste

2 scallions, finely sliced (optional garnish)

Sprinkled Smoked Paprika

Instructions:

  1. Brown ground beef in a large skillet on medium. Salt and Pepper to taste. When cooked remove most of the fat and set aside. Preheat oven to 400 degrees
  2. Add onions and celery. carrots, and garlic and stir until softened.  Taste f, if more salt and pepper is needed.
  3. Add tomato paste, rosemary, Dano’s. and thyme; Worcestershireand ; mix in peas. Cover mixture with beef broth and simmer on medium-low to reduce the broth, while you do the potatoes.
  4. Chop and boil potatoes. Rice or mash the potatoes in a large bowl. I think lumps as ok.
  5. Nix in butter, and shredded cheddar; Then warmed heavy cream and egg yolks into the potatoes. Lastly, mix in shredded  1/2 parmesan cheese.
  6. Spread the meat mixture evenly over the bottom of a 9×13 baking dish.  Cover with an even layer of potatoes, Add some lines with a fork across the top.
  7. Salt and pepper to taste and sprinkle remaining parmesan cheese on top.
  8. Place on the middle rack of the preheated oven and cook until the top is golden brown(25-30 minutes).
