U-PICK Strawberry Whip Pie

I first tried this very simple pie to celebrate my Granddaughter’s 18th Birthday. She loves strawberries!! I have seen her plow through a big box of them all by herself much to her brother’s dismay when he came back from playing video games. I grew up with fresh ripe strawberries. The only way my Mom could afford to get us fresh strawberries was to take us out to the “U-Pick” fields and my brother and I would eat as many as went into our bucket. There is nothing sweeter or more wonderful than a fresh ripe strawberry on a summer day except maybe this pie. If its summer and there are U-PICK fields near you grab your kids or grandkids or both and go pick some berries for this pie. If not, be sure to get locally grown berries at you local farmers market so that you know they haven’t travelled too far to be part of your pie.

Ingredients:

1 8oz package of Cream Cheese
8 oz Heavy or Whipping Cream
2 Tbs of Granulated Sugar
1 cup Confectioners Sugar
2 cups Fresh Ripe Strawberries – Washed and Quartered
1 tsp of Key Lime Juice
1 9in Graham Cracker Crust

Instructions:

Whipping Cream Prep:

  1. Place Mixing Bowl and Whisk in Freezer for 10 minutes
  2. Add Sugar to Mixing Bowl
  3. Add Heavy Cream to Mixing Bowl
  4. Whisk until stiff peaks form

Pie Filling Prep:

  1. Mix Confectioners Sugar, Key Lime Juice and Cream Cheese completely
  2. Fold in Whipped Cream
  3. Gently add Strawberries and combine with spoon
  4. Spoon filling into pie crust and decorate top with slices of strawberries
  5. Chill for at least 3 hours (can be made the night before) before serving
