Baked Ravioli Comfort
This year the ballot was very wimpy, with only one office so we had a lot of time on our hands to come up with new recipes.
Ingredients:
1 24 oz pkg. frozen beef or cheese or combo ravioli
8 oz mushrooms, sliced
1/2 sweet onion, sliced thin
1 16 oz Ricotta or cottage cheese
2 cans Kirkland tomato sauce
1tsp garlic, minced
1/2 tsp each, oregano, basil, sugar
1 16 oz pkg mozzarella
1 8 oz pkg Parmesan cheese
Instructions:
- Reheat oven to 350
- Spray 9×13 baking dosh
- Add frozen ravioli
- Sauté mushrooms, onions, garlic, oregano, and basil in a non-stick saucepan until mushrooms are golden and onions are clear
- Add tomato sauce, sugar, salt substitute, and coarse ground pepper to taste
- After mixing the sauce well , spoon 1/2 over the ravioli in the baking dish
- Add Ricotta or cottage cheese and spread evenly
- Spoon the remaining sauce over the cheese layer
- Cover with mozzarella
- Cover dish with aluminum foil and place in oven
- Bake for 30 minutes
- Remove dish from oven and switch to broil
- Remove foil and spread parmigiana on top
- Place dish back in the oven for 10 minutes and serve hotEnjoy!
