Mexican Street Corn

What other tree I tasted the first time I came to Southern California my lips still burn and they taste so good. Thought I’d try it myself.

 

 

Ingredients

5 ears of sweetcorn, shocked, and boiled or grilled

/2 cup  Mayo and Mexican Crema

One bunch, fresh cilantro divided

1 tsp chili powder

2 Tbs Tajin, divided

3 Tbs key lime juice

1/2 cup Cotija cheese

1/2 cup unsalted butter

Directions

  1. In a medium mixing bowl, combine mayo, Crema , 1/4 cup cilantro, chili powder, 1 Tbs Tajin in Key lime juice. Mix well set Street corn sauce aside.
  2. In a separate bowl, add Cotija cheese and the other half of the Tajin. Mix well set aside.
  3. Butter each year completely. The butter axes the binder for the other ingredients.
  4. Cover each year with street corn sauce roll in Cotija cheese mixture.
  5. Roll each ear in cheese mixture and plate.
  6. Garnish with cilantro melted butter and Tajin. Serve hot.
