Mexican Street Corn
What other tree I tasted the first time I came to Southern California my lips still burn and they taste so good. Thought I’d try it myself.
Ingredients
5 ears of sweetcorn, shocked, and boiled or grilled
/2 cup Mayo and Mexican Crema
One bunch, fresh cilantro divided
1 tsp chili powder
2 Tbs Tajin, divided
3 Tbs key lime juice
1/2 cup Cotija cheese
1/2 cup unsalted butter
Directions
- In a medium mixing bowl, combine mayo, Crema , 1/4 cup cilantro, chili powder, 1 Tbs Tajin in Key lime juice. Mix well set Street corn sauce aside.
- In a separate bowl, add Cotija cheese and the other half of the Tajin. Mix well set aside.
- Butter each year completely. The butter axes the binder for the other ingredients.
- Cover each year with street corn sauce roll in Cotija cheese mixture.
- Roll each ear in cheese mixture and plate.
- Garnish with cilantro melted butter and Tajin. Serve hot.
